Collagen Coconut Cupcakes (Gluten Free)

Ingredients:

Cupcakes

  • 1 ½ cups of Gluten Free 1 to 1 baking flour
  • ½ cup of finely shredded coconut
  • 1 tsp of baking powder 
  • ½ cup of coconut sugar
  • ½ cup of monk fruit sweetener
  • 1 scoop of Renewed Health’s Collagen
  • 1 egg
  • ¼ cup of coconut oil at room temperature
  • ½ tsp of coconut extract
  • ½ tsp of vanilla extract 

Frosting

  • 1 stick of softened butter
  • 3 cups of powdered sugar
  • 3 tsp of light canned coconut milk
  • ½ tsp of coconut extract
  • ¾ cup of finely shredded coconut

Instructions:

  1. Preheat oven to 350 degrees
  2. In a large bowl, combine all dry ingredients together and mix. Then add in the wet ingredients and combine until batter forms.
  3. Line or grease a cupcake pan for 12 cupcakes. Add in 2-3 tbsp of batter in each mold. 
  4. Bake the cupcakes for 20 minutes, and put a toothpick in to see if it comes out clean. Once it does, take the cupcakes out and allow them to cool before moving them out of the pan. 
  5. For the frosting, combine the softened butter and powdered sugar in a bowl and mix together with a hand mixer. Add in the coconut milk and coconut extract and mix until smooth. 
  6. Use a smooth knife to spread the icing onto the cupcakes or a piping bag if you have one. 
  7. Sprinkle the shredded coconut on top of the frosting to finish the cupcakes and enjoy!
