Cranberry Blondies with Collagen (Gluten Free)

Ingredients:

Blondies

  • ½ cup of unsalted creamy almond butter
  • ¼ cup of maple syrup
  • 1 pasture-raised egg 
  • 1 tsp of vanilla extract
  • 1 cup of almond flour
  • 1 scoop of Renewed Health’s Collagen
  • ¼ tsp of fine grain sea salt
  • ½ tsp of baking soda
  • Zest of one orange
  • ⅔ cup of dried cranberries
  • ⅔ cup of white chocolate chips

Cream Cheese Frosting

  • 8 oz cream cheese (dairy free if desired)
  • ⅔ cup of powdered sugar

Instructions:

  1. Preheat the oven to 325 degrees Fahrenheit.
  2. In a large mixing bowl, stir together the almond butter, maple syrup, egg, vanilla extract, almond flour, slat, baking soda, collagen and orange zest until smooth.
  3. Stir in ⅓ cup of dried cranberries and ⅓ cup of white chocolate chips.
  4. Line a 8x8 pan with parchment paper and pour the mixture in until evenly spread throughout. 
  5. Bake for 20 minutes or until the edges are slightly brown. Let sit and cool in the pan. 
  6. To make the cream cheese frosting, mix the cream cheese and powdered sugar together with a hand mixer until light and fluffy.
  7. Take the blondies out of the pan and spread the cream cheese frosting on top.
  8. Cut the blondies in half and then in half again to make 4 big squares. Then, cut each diagonal to make 8 scone shaped triangles. 
  9. Sprinkle the remaining dried cranberries on top.
  10. Melt the remaining white chocolate chips in the microwave in 15 second intervals until melted and then drizzle on top.
  11. Enjoy! They can also be stored in the fridge.
