Pumpkin Collagen Coffee Cake (Paleo)

Ingredients:

Cake

  • ¼ cup of melted coconut oil
  • ¼ cup of maple syrup
  • ¼ cup of coconut sugar
  • 1 cup of canned pure pumpkin
  • 4 large eggs
  • 1 cup of almond flour
  • ¼ cup of coconut flour
  • 1 scoop of Renewed Health’s collagen
  • ½ tsp of baking soda
  • 1 ½ tsp of pumpkin pie spice
  • ½ tsp of cinnamon
  • ½ tsp of salt

Topping

  • ¼ cup of coconut flour
  • ½ cup of almond flour
  • 2 tbsp of coconut sugar
  • ½ tsp of cinnamon
  • 2 tbsp of maple syrup
  • 2 tbsp of coconut oil

Instructions:

  1. Preheat the oven to 325 degrees and line a 9x9 pan with parchment paper.
  2. Make the crumb topping first. In a small mixing bowl, combine flours, coconut sugar, cinnamon, maple syrup and coconut oil. Mix well until it has a gritty texture and then set aside.
  3. In a large bowl, combine coconut oil, maple syrup, coconut sugar and pumpkin and mix together.
  4. Add in the eggs and mix well until combined.
  5. Add in the flours, Renewed Health’s collagen, baking soda, pumpkin spice, cinnamon and salt. Mix until everything is smooth. Pour into the prepared pan and add crumbled topping.
  6. Bake for 45-50 minutes.
  7. Eat it warm or cool and enjoy!
