Collagen Eggnog (Paleo)

This paleo eggnog recipe is a healthier alternative to traditional eggnog and is perfect for you to enjoy during the holidays for several reasons. Ingredients:

  • 2 cups of vanilla almond milk
  • 1 15 oz can of regular coconut milk
  • 1 tsp of vanilla
  • 1 tsp of cinnamon
  • ¼ tsp of nutmeg
  • Pinch of ground cloves
  • 3 organic egg yolks 
  • ⅓ cup of maple syrup
  • 1 scoop of Renewed Health’s Collagen

Optional: cinnamon sticks for serving

Instructions:

  1. Add almond milk, coconut milk, vanilla, cinnamon, nutmeg and cloves to a saucepan and heat over medium heat until it simmers. 
  2. While the milk heats up, place egg yolks, maple syrup and collagen in a blender and blend on low-medium speed for about 30 seconds until it is light and fluffy.
  3. Once the milk has started to simmer, turn the blender on low and slowly add the milk mixture a little at a time into the blender. It is very important to do this part slowly to avoid curdling!
  4. Add eggnog mixture back into the saucepan and heat over medium low heat for about 10-15 minutes, whisking constantly until it thickens. 
  5. Remove from heat and let eggnog cool to room temperature. Transfer it to a jar, cover and refrigerate overnight or for a few hours until chilled.
  6. Serve with some cinnamon on top and cinnamon sticks if desired and enjoy!
